- **1 tbsp** olive oil
- **1/4 cup** onion, chopped
- **1** red bell pepper, chopped
- **2** garlic cloves, minced
- **1/2 tsp** ground cumin
- **1/2 tsp** paprika

- **8** oz. canned diced tomatoes
- salt and pepper to taste
- **3 large** eggs
- **1/4 cup** crumbled feta cheese
- chopped fresh parsley or cilantro, for garnish

1. Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and sauté until they begin to soften, about 5 minutes.

2. Add the garlic, cumin, paprika, and cayenne pepper, and cook for another 1-2 minutes, stirring constantly.

3. Pour in the diced tomatoes and season with salt and pepper to taste. Reduce the heat to low and simmer for 10-15 minutes, stirring occasionally, until the sauce has thickened.
