- **2 cups** steamed broccoli florets (chopped into small pieces)
- **1 oz** all-purpose flour
- **1** oz. grated Parmesan cheese
- **1** oz. breadcrumbs (Panko or regular)
- some mozzarella cheese, cut into cubes
- Olive oil or cooking spray, for frying

1. In a mixing bowl, combine the steamed and chopped broccoli, all-purpose flour, grated Parmesan cheese, and breadcrumbs. Mix everything together until well combined.

2. Form the mixture into patties by scooping a portion of the mixture and shaping it with your hands. Create an indentation in the center of each patty and place some shredded mozzarella cheese in the indentation. Carefully enclose the cheese within the patty, shaping it back into a flat disc.

3. Heat a non-stick skillet over medium heat and add a drizzle of olive oil or use cooking spray to coat the surface.

4. Carefully place the patties in the skillet, making sure not to overcrowd the pan. Cook the patties for 3-4 minutes on each side or until they turn golden brown and crispy.

5. Once the patties are cooked and crispy, remove them from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
