# Coconut Flour Chocolate Chip Cookies

## Ingredients

- **1/4 cup** coconut oil, softened
- **1** 1/2 tbsp honey
- **1/2 tsp** vanilla extract
- **2** eggs
- **1/3 cup** + 1 tbsp coconut flour
- **1/2 tsp** baking powder
- **1** pinch of salt
- **30 g** Sugar-free chocolate chips

## Instructions

1. Preheat the oven to 175°C (350°F ).

2. In a large bowl, mix together the softened coconut oil and honey. Beat in the eggs and vanilla extract until well combined. In the other bowl, mix together the coconut flour, baking powder, and salt.

3. Gradually add the dry ingredients to the wet mixture and mix until well combined. Stir in the chocolate chips or chopped chocolate.

4. Line a baking tray with parchment paper. Portion out the dough with the spoon and place the cookies onto the baking tray.

5. Bake for 13-15 minutes or until the edges are lightly browned.

6. Allow the cookies to cool for a few minutes on the baking tray before transferring them to a wire rack to cool completely. Enjoy!

- Let the batter rest for 2–3 minutes after mixing. Coconut flour is extremely absorbent and needs time to soak up the liquid — the batter will thicken noticeably and be much easier to scoop.
- Don't skip the eggs or reduce them. Coconut flour needs more eggs than regular flour for binding and moisture. Using fewer eggs will result in dry, crumbly cookies that fall apart.
- Pull the cookies from the oven when the edges are just lightly golden — they continue to firm up as they cool on the baking sheet. Overbaking coconut flour cookies makes them dry and chalky.
