# Easy Vegetarian Quesadilla

- **4 large** whole-grain tortillas
- **4-5** bell peppers or sweet peppers, sliced or diced
- **2 tbsp** onion, diced
- **2 tbsp** crushed tomatoes
- **1/2 cup** black beans or pinto beans, rinsed and drained1
- **2 cups** grated cheese (cheddar, Monterey Jack, or a Mexican blend)
- **1/2 tsp** ground cumin
- salt and pepper, to taste
- Chili flakes, to taste (optional)
- **1 tbsp** BBQ sauce
- **1-2 tbsp** olive oil, for cooking

## Instructions

1. Heat a tablespoon of olive oil in a skillet over medium heat. Add cut onions and bell peppers, and cook for 3-4 minutes, or until they become tender. Season with salt, pepper, ground cumin, chili flakes.

2. In a bowl, combine the drained crushed tomatoes, BBQ sauce and beans. Add to the peppers and cook for 2 additional minutes.

3. Lay the tortillas flat on a work surface. On one half of each tortilla spread a layer of grated cheese, then spread an even layer of the tomato-bean mixture and cover it with a layer of grated cheese again. Fold the other half of the tortilla over the filling to create a half-moon shape.

4. Heat a large non-stick skillet or griddle over medium heat. Carefully transfer the quesadillas to the skillet, cooking one or two at a time, depending on the skillet's size. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted.

5. Remove the quesadillas from the skillet, and let them cool for a minute or two before cutting them into wedges. Serve the quesadillas with some Salsa, Guacamole and sour cream. Enjoy!
