Prepare

## Ingredients

- **1 cup** sugar-free chocolate
- **1/2 cup** creamy peanut butter (unsweetened)
- **2 tbsp** honey
- **1/4 tsp** salt
- **1/2 tsp** pure vanilla extract (optional)

Cook

## Instructions

1. Microwave the chocolate in 20-30 second intervals, stirring after each interval, until the chocolate is completely melted and smooth. Be cautious not to overheat it.

2. Spoon a small amount of melted sugar-free chocolate into the bottom of each cupcake liner, just enough to create a thin chocolate base. Use the back of the spoon to spread the chocolate slightly up the sides of the liners. Place them into the freezer, so the chocolate set.

3. Combine the creamy peanut butter, salt, pure vanilla extract, and honey. Mix until the ingredients are well blended and form a smooth peanut butter filling.

4. Place a small amount of the honey-sweetened peanut butter mixture on top of the chocolate layer in each cupcake liner. Place them in the refrigerator so the mixture sets.

5. Spoon the remaining melted sugar-free chocolate over the peanut butter filling, covering it completely and sealing the homemade Reese's Cups. Place the muffin tin in the refrigerator for about 30 minutes, or until the homemade honey-sweetened Reese's Cups have hardened. Once they are fully set, remove the honey-sweetened Reese's Cups from the muffin tin and enjoy your sweet treat!

## Chef's Tips & Notes

- Use the best quality chocolate you can afford — in chocolate-forward recipes, the quality of the chocolate IS the flavor. Look for at least 60–70% cacao for rich depth.
- Melt chocolate gently using a double boiler or microwave in short 15-second bursts, stirring between each. Overheating causes chocolate to seize and become grainy.
- Let chocolate-based desserts cool completely before cutting or serving. Patience rewards you with a cleaner cut and a more developed, intense chocolate flavor.

### Are these Reese’s Cups healthy for you?

Homemade Reese’s Cups can be a healthier alternative to store-bought versions, especially when you control the ingredients. However, whether they are considered healthy depends on the specific ingredients you use and your dietary preferences and goals. Here are some considerations: Healthier Aspects:

1. Control Over Ingredients: Making homemade Reese’s Cups allows you to choose high-quality ingredients and control the amount of sugar and other additives in the recipe.
2. Nutrition Benefits: Peanut butter used in moderation can provide healthy fats, protein, and essential nutrients like vitamin E, magnesium, and fiber.
3. Reduced Sugar Option: If you opt for sugar-free chocolate chips and use a sugar substitute like stevia or erythritol, you can significantly reduce the sugar content.

Considerations:

1. Calorie and Sugar Content: Even with healthier ingredients, homemade Reese’s Cups can still be calorie-dense and contain sugar or sugar substitutes. Consuming them in moderation is advisable, especially if you are watching your calorie or sugar intake.
2. Balanced Diet: While homemade Reese’s Cups can be a tasty treat, they should not replace balanced meals with a variety of nutrients.

These Healthy Homemade Reese’s Cups can be a better choice compared to their store-bought counterparts because you have more control over the ingredients. However, they should still be enjoyed in moderation as part of a balanced diet, especially if you have specific dietary goals or restrictions.

### What are sugar-free Reese’s Cups made of?

Here’s a description of each ingredient used in healthy homemade Reese’s Cups:

1. Sugar-Free Chocolate: This is chocolate sweetened with sugar substitutes like stevia or erythritol. They provide the chocolatey coating for the Reese’s Cups.
2. Creamy Peanut Butter: Creamy peanut butter is a smooth and spreadable paste made from roasted peanuts. It adds a rich, nutty flavor and creamy texture to the filling.
3. Salt: A small amount of salt is added to enhance the flavor and balance the sweetness of the peanut butter filling.
4. Pure Vanilla Extract (optional): Vanilla extract is used to add a hint of vanilla flavor to the peanut butter filling, enhancing its overall taste.
5. Honey: Honey is a natural sweetener that provides sweetness to the filling. You can adjust the amount of honey to control the level of sweetness.

These ingredients come together to create homemade Reese’s Cups that are customizable to your dietary preferences and offer a balance of flavors and textures. You have the option to use sugar-free chocolate chips and adjust the sweetness level with honey, making them suitable for different dietary needs.

### How to make Reese’s Cups at home?

Heat the chocolate in short 20–30 second bursts in the microwave, stirring after each interval until it becomes completely smooth. Be careful not to overheat it. Spoon a small portion of the melted chocolate into the base of each cupcake liner, creating a thin chocolate base. Use the back of a spoon to spread the chocolate up the sides of the liners. Place the liners in the freezer to allow the chocolate to set. Blend together the creamy peanut butter, salt, pure vanilla extract, and honey until you have a well-mixed, smooth peanut butter filling.

Add a small dollop of the honey-sweetened peanut butter mixture on top of the chocolate layer in each cupcake liner. Place the liners in the refrigerator to allow the mixture to solidify.

Pour the remaining melted sugar-free chocolate over the peanut butter filling, ensuring it completely covers and seals the homemade Reese’s Cups. Transfer the muffin tin to the refrigerator for approximately 30 minutes, or until the honey-sweetened Reese’s Cups have fully hardened. Once they are set, remove the Reese’s Cups from the muffin tin and savor your sweet treat!

### Substitutions & Variations

As a personal chef who specializes in dietary accommodations, I always encourage my clients to adapt recipes to their individual needs. Here are some practical variations for this recipe:

- **Dairy-Free:** Use dairy-free sugar-free chocolate chips — many sugar-free chocolates contain milk solids, so check the label carefully. The peanut butter filling is already dairy-free.
- **Vegan-Friendly:** Replace honey with pure maple syrup or agave nectar in equal amounts, and use dairy-free chocolate. Both swaps keep the flavor profile intact while making the recipe fully plant-based.
- **Nut-Free:** Substitute the peanut butter with sunflower seed butter (SunButter) for a nut-free alternative that provides a very similar creamy texture and rich flavor. Ensure your chocolate is also processed in a nut-free facility.

### Frequently Asked Questions

****How long do these homemade Reese’s cups last?****

Store the cups in an airtight container in the refrigerator for up to 2 weeks, or freeze them for up to 3 months. They taste best eaten cold straight from the fridge — the chocolate stays firm and the peanut butter filling has a satisfying, fudgy texture.

****Can I use a different nut butter instead of peanut butter?****

Yes! Almond butter, cashew butter, or sunflower seed butter (SunButter) all work beautifully in this recipe. Each gives a slightly different flavor profile. Almond butter creates a more delicate, refined taste, while SunButter is a great nut-free alternative that mimics the creamy texture of peanut butter.

****Why did my chocolate seize or turn grainy when melting?****

Chocolate seizes when it comes into contact with even a small amount of water or is overheated. Always use a completely dry bowl and utensils. Microwave in short 15–20 second intervals, stirring after each burst. If using a double boiler, make sure no steam escapes into the chocolate. If it does seize, try stirring in a teaspoon of coconut oil to smooth it out.
