- **1/4 cup** honey
- **1/4 cup** coconut oil, melted
- **1 tsp** vanilla extract
- **1/3 cup** chopped cashews
- **1/3 cup** coconut chips

2. In a separate bowl, whisk together honey, melted coconut oil and vanilla extract until well combined.

3. Pour the wet mixture over the dry ingredients and stir until everything is well coated. Spread the granola mixture onto the prepared baking sheet in an even layer and bake for 25-30 minutes, until the granola is golden brown and crispy.
