# Lemon Garlic Shrimp Pasta

- **160 g** Long Pasta (such as spaghetti, fettuccine, or linguine)
- **200 g** Shrimp
- **2 tbsp** Olive oil
- **0.5 tsp** chili flakes
- **0.5 tsp** paprika
- **1 tsp** Salt and pepper
- **40 g** Butter
- **4** Garlic cloves
- **100 g** white wine
- **0.5** Lemon (juice and zest)
- **20 g** Parmesan cheese
- **1 bunch** Parsley

Cook

## Instructions

1. Peel and chop the garlic and the parsley. Squeeze 1/2 of the lemon and grate its zest. Set aside.

2. Cover shrimp with salt, pepper, chili flakes, paprika and olive oil. Set aside.

3. Cook pasta till al dente according to pasta package instructions.

4. Saute shrimp for about 2 mins on each side on medium heat. Then take them out of the pan and set them aside.

5. In the same pan, add butter, garlic, white wine, lemon zest and juice. Sautee 2-3 mins until fragrant.

6. Place cooked pasta into the pan with butter, then add shrimp and parsley and mix.

7. Place the pasta on the plates, and serve with Parmesan cheese and lemon slices. Enjoy!

It depends on your taste, however, to make the pasta dish well balanced I recommend preparing about 80-100g of raw shrimp per person, in the amount of shrimp, it’s about 7-8 middle-sized shrimps. It’s enough to emphasize the dish’s taste but not too much to cover all the other flavors of the dish.

### How to defrost shrimp for pasta

I recommend these two ways to defrost shrimp that ensure avoiding shrimp becoming rubbery:

1. Refrigerator Thawing: Place the frozen shrimp in a bowl or on a plate and cover it with plastic wrap. Place the bowl or plate in the refrigerator for several hours, or overnight, until the shrimp has fully thawed.
2. Cold Water Thawing: Place the frozen shrimp in a resealable plastic bag, removing as much air as possible. Submerge the bag in cold water, changing the water every 30 minutes until the shrimp has thawed, which usually takes about 20-30 minutes.

Peel and chop garlic and chop the parsley.

Let’s prepare the shrimp. Place defrosted shrimp into a bowl, and season them with salt, pepper, chili flakes, paprika and olive oil. Set aside.

Let’s cook pasta. Place a pot on high heat, add water, and settle it to a boil. When the water starts boiling, add a pinch of salt and pasta. I chose linguine. However, any long pasta will be suitable, e.g., spaghetti or tagliatelle. Decrease the heat to medium and cook pasta till al dente according to pasta package instructions. Place a pan on medium heat, and saute shrimp for about 2 mins on each side, so they got pink. Then take the shrimp out of the pan and set aside.

In the same pan add butter, garlic, white wine, lemon zest and juice. Sautee 2-3 mins until fragrant.
