## Chef's Tips & Notes

- Use long-cooking (old-fashioned) rolled oats for the best creamy texture in savory oatmeal — instant oats turn mushy and lack the chewy bite that holds up to hearty toppings.
- For a perfect poached egg, add a splash of white vinegar to the simmering water and create a gentle whirlpool before dropping in the egg — this helps the white wrap neatly around the yolk.
- Layer the Parmesan between spoonfuls of oatmeal rather than just on top — this way every bite has that salty, savory richness throughout the dish.

## Chef Ana's Recipe Notes

The combination of oatmeal with a poached egg, parmesan cheese, and pomegranate seeds creates a savory and slightly sweet dish with a creamy texture and a crunch from the seeds. The Parmesan cheese adds a saltiness and creamy texture, while the pomegranate seeds provide a burst of tart flavor. This oatmeal recipe is a healthy and delicious meal for breakfast!

### Are oatmeal and eggs good together?

Yes! That’s a great combination of flavors when you’re tired of regular sweet oatmeal. The creamy texture of a cooked egg complements the chewy texture of oatmeal, and the eggs can add protein to the dish. Oatmeal with poached or scrambled egg is a nutritious and satisfying breakfast option. By the way, the soluble fiber in oats is beta-glucan, which has been researched to help slow digestion, increase satiety, and suppress appetite, so you’ll be well-fed for a long time!

### How to make Oatmeal with a Poached Egg

Let’s cook the oatmeal first. Put a saucepan on medium heat, and add oats and milk to the pan. It’s healthier to use long-boiled oats, that need to be cooked for at least 10 mins.

Prepare the poached egg, according to the instructions here. While the oatmeal and the poached egg are being cooked, let’s peel the pomegranate, and take the seeds out. Prepare the Parmesan cheese. Grate it on a fine grater or use bought that is already fine grated. Cut the hazelnuts. This is easy to do by pressing on them with the outside of the knife and then chopping with the knife’s blade. When the oatmeal is cooked, add butter to the pan with the oatmeal and mix. This adds a creamy flavor to the final dish.

### Substitutions & Variations

As a personal chef who specializes in dietary accommodations, I always encourage my clients to adapt recipes to their individual needs. Here are some practical variations for this recipe:

- **Dairy-Free:** This recipe already uses coconut or almond milk! Simply skip the Parmesan cheese and optional butter, or substitute with nutritional yeast and a drizzle of olive oil for that savory richness.
- **Nut-Free:** Replace the hazelnuts with pumpkin seeds (pepitas) or sunflower seeds for a similar crunch without the allergen concern.
- **Vegan:** Skip the egg and Parmesan. Top the oatmeal with sliced avocado, sautéed mushrooms, or roasted chickpeas for a satisfying plant-based protein boost.

### Frequently Asked Questions

****Can I use quick oats instead of rolled oats?****

You can, but the texture will be quite different. Quick oats cook faster and turn softer, almost porridge-like. For savory oatmeal with toppings, rolled (old-fashioned) oats hold up much better and give a pleasant chewy texture that pairs well with the poached egg and Parmesan.

****What other toppings work well with savory oatmeal?****

Savory oatmeal is wonderfully versatile. Try sautéed spinach, roasted cherry tomatoes, crumbled feta, sliced avocado, or everything bagel seasoning. Fresh herbs like chives or microgreens also add a bright finishing touch.

****How do I poach an egg without it falling apart?****

Use the freshest eggs you can find — fresh whites hold together much better. Bring the water to a gentle simmer (not a rolling boil), add a splash of white vinegar, create a small whirlpool with a spoon, and gently slide the egg in. Cook for 3–4 minutes for a runny yolk.

****Can I make the oatmeal base ahead of time?****

Yes — cook the oatmeal, let it cool, and store it in the refrigerator for up to 3 days. Reheat with a splash of milk on the stovetop, stirring until creamy again. Poach the egg fresh just before serving for the best results.
