# Baked Pomegranate Salmon

- **14** oz. salmon filet
- a pinch of salt
- freshly ground black pepper
- **1 tbsp** olive oil
- **4 tbsp** Pomegranate molasses
- a couple of rosemary sprigs

Cook

## Instructions

1. Place salmon filet pieces on the plate and cover them with salt, black pepper and olive oil, so they are fully covered.

2. Cover the pieces with pomegranate molasses. Let it be marinated for 10mins.

3. Turn on the oven to 180°C (356°F). Place the salmon filet on the tray lined with baking paper. Add some rosemary springs among the pieces.

4. Place the salmon in the oven to roast. Cooking time will vary depending on the filet size and its thickness. The pieces that are on the pics took 10mins.

5. Take out the salmon and place it on the plates. Serve it with some more molasses on top and pomegranate seeds. Enjoy!

- For the best texture, bring your salmon to room temperature for 10–15 minutes before cooking. This ensures perfectly even cooking and prevents the outside from overcooking while the center stays cold — a technique I picked up during my years in professional kitchens.
- Use a meat thermometer to check doneness: salmon is perfectly cooked at an internal temperature of 145°F (63°C). Pull it from the heat a few degrees early, as residual heat will carry it the rest of the way.
- Pat the salmon completely dry with paper towels before seasoning or searing. Removing surface moisture is the single most important step for achieving a golden, crispy crust.

### Ingredients for 2 serves:

- 400g salmon filet
- a pinch of salt
- freshly ground black pepper
- 1 tbsp olive oil
- 4 tbsp Pomegranate molasses
- a couple of rosemary sprigs

### Some tips before cooking:

- Salmon filet. I use pre-portioned salmon as they take less time to cook but ensure not to overcook it. Then salmon will be dry and lose its gentleness. Salmon is rich in many key nutrients, including selenium, phosphorus, and B vitamins and it’s a good source of protein.
- Spice mix. As you see, there are no a lot of spices in the ingredients list, that’s because we don’t want to kill the primarily salmon taste and the pomegranate taste with anything else. So we use Pomegranate molasses as a primary spice and rosemary springs as a bit of addition.
- Garnish. This dish perfectly suits rice. I like Black rice, also known as purple rice or Basmati is also a good option. To add freshness, add some fresh salad to the final dish, e.x. [Broccoli and Grapefruit Salad](/recipes/broccoli-and-grapefruit-salad/) will be a good pairing.
