## Chef's Tips & Notes

- Do not overcook shrimp — they are done the moment they turn pink and curl into a loose C-shape. Overcooked shrimp become rubbery and lose their natural sweetness.
- Devein and pat shrimp completely dry before cooking. Excess moisture causes steaming instead of searing, which prevents that gorgeous golden caramelization.
- For maximum flavor, cook shrimp in a single layer in a very hot skillet. Crowding the pan lowers the temperature and steams the shrimp instead of giving them a beautiful sear.

### What Kind Of Shrimp To Use in Shrimp Stuffed Avocado recipe?

When making shrimp stuffed avocado, it’s best to use cooked shrimp that has been peeled and deveined. You can use either fresh or frozen shrimp for this recipe, depending on what is available to you. It’s important to choose the right size of shrimp to ensure that it is easy to eat when stuffed into the avocado halves. I use small-sized shrimp (71-90 count per pound) for making shrimp stuffed avocado. Small-sized shrimp can be a good choice for this dish because they will fit easily into the avocado halves and provide a good texture and flavor. However, Medium-sized shrimp (41-50 count per pound) are also suitable.

- **Vegetarian/Vegan:** Replace the shrimp with diced hearts of palm, seasoned black beans, or crispy roasted chickpeas for a satisfying plant-based filling that pairs beautifully with the creamy avocado.

### Frequently Asked Questions

****How do I pick the perfect avocado for this recipe?****

Choose avocados that yield gently to pressure when squeezed — they should feel like a ripe peach. Avoid avocados with dark sunken spots or an overly mushy feel. If they are still firm, leave them at room temperature for 1–2 days. To speed up ripening, place them in a paper bag with a banana.

****Can I prepare the shrimp stuffed avocado ahead of time?****

You can cook the shrimp and prepare the filling mixture up to a day ahead. Store it in an airtight container in the refrigerator. Halve the avocados and assemble just before serving to prevent browning. A squeeze of extra lime juice over the avocado also helps keep it vibrant.

****How do I keep the avocado from turning brown?****

Lime juice is your best friend here — the citric acid slows oxidation significantly. Squeeze lime juice generously over the cut avocado surfaces immediately after halving them. If you need to hold them briefly, press plastic wrap directly against the exposed avocado flesh to limit air contact.

****Can I use pre-cooked shrimp for this recipe?****

Absolutely! Pre-cooked shrimp are a great shortcut. Simply thaw them if frozen, pat dry, and toss with the chili flakes, salt, and pepper. You can serve them cold in the avocado boats or warm them quickly in a skillet for 1–2 minutes before assembling.
