## Chef's Tips & Notes

- Do not overcook shrimp — they are done the moment they turn pink and curl into a loose C-shape. Overcooked shrimp become rubbery and lose their natural sweetness.
- Devein and pat shrimp completely dry before cooking. Excess moisture causes steaming instead of searing, which prevents that gorgeous golden caramelization.
- For maximum flavor, cook shrimp in a single layer in a very hot skillet. Crowding the pan lowers the temperature and steams the shrimp instead of giving them a beautiful sear.

### Ingredients for Shrimp Tacos with Avocado Slaw

Here’s a description of each ingredient in the Shrimp Tacos with Avocado Slaw: For Shrimp:

- Shrimp: Fresh, peeled, and deveined shrimp are used for this recipe. They are a popular seafood choice known for their delicate and sweet flavor. Shrimp is a commonly eaten seafood anda lean source of protein. While the amount of calories in shrimp is low, the number of key nutrients is high. These nutrients include vitamin B12, which helps form red blood cells and maintain nervous system function, and selenium, a mineral that helps protect cells from damage.
- Olive Oil: Used for marinating the shrimp and providing a light, healthy coating during cooking.
- Paprika: A ground spice made from dried red peppers, adding a mild smoky flavor and a vibrant reddish color to the shrimp.
- Salt and Pepper: Common seasonings that enhance the taste of the shrimp.
- Garlic Powder: A convenient alternative to fresh garlic, providing a garlicky taste to the shrimp without the need for chopping.

For Avocado Slaw:

- Avocado: A creamy and nutritious fruit with a rich, buttery flavor that adds a luscious texture to the slaw.
- Greek Yogurt: A thick and tangy yogurt that creates a creamy dressing for the slaw, adding a probiotic boost and richness to the dish.
- Shredded Cabbage: Finely shredded cabbage adds a crisp and refreshing element to the slaw, providing a nice contrast to the creamy avocado.
- Grated Carrots: Carrots add sweetness and color to the slaw, balancing the flavors.
- Cilantro: A fresh herb with a bright and citrusy flavor, adding a burst of freshness to the slaw.
- Lemon Juice: Freshly squeezed lemon juice adds tanginess and helps prevent the avocado from browning.
- Salt and Pepper: Seasonings that enhance the overall flavor of the slaw.

For Serving:

- Tortillas: Soft and pliable tortillas (corn or flour) serve as the vessel to hold the delicious shrimp and slaw.

### Substitutions & Variations

As a personal chef who specializes in dietary accommodations, I always encourage my clients to adapt recipes to their individual needs. Here are some practical variations for this recipe:

- **Gluten-Free:** Use corn tortillas instead of flour tortillas — they are naturally gluten-free and add a slightly sweet, toasty flavor that pairs beautifully with the shrimp and slaw.
- **Dairy-Free:** Replace the Greek yogurt in the avocado slaw with plain coconut yogurt or simply use extra mashed avocado with lime juice for a dairy-free creamy dressing.
- **Vegetarian/Vegan:** Replace the shrimp with crispy battered cauliflower florets, seasoned black beans, or pan-seared extra-firm tofu strips. For vegan, also swap the Greek yogurt for coconut yogurt in the slaw.

### Frequently Asked Questions

****Can I use corn tortillas instead of flour?****

Absolutely! Corn tortillas are a wonderful choice and add a slightly sweet, toasty flavor. They are also naturally gluten-free. Warm them in a dry skillet for about 30 seconds per side to make them pliable and prevent cracking when you fold them.

****Can I make the avocado slaw ahead of time?****

You can shred the cabbage and carrots ahead of time and store them in the refrigerator. Mix the avocado dressing and combine with the vegetables no more than an hour before serving to keep the avocado from browning. The lime and lemon juice in the dressing help slow oxidation.

****What size shrimp work best for tacos?****

Medium to large shrimp (31–40 or 26–30 count per pound) are ideal for tacos. They are big enough to be the star of the filling without being unwieldy. Make sure they are peeled and deveined before seasoning and cooking.

****How do I keep the tortillas warm while assembling?****

Wrap warmed tortillas in a clean kitchen towel or aluminum foil and place them in a low oven (200°F / 95°C) while you cook the shrimp and finish assembling. A tortilla warmer also works perfectly for keeping them soft and pliable at the table.
