- **1/2** English cucumber, sliced into half moons
- **1/2** red bell pepper, thinly sliced
- **1/2** green bell pepper, thinly sliced
- **1** ripe mango, peeled and sliced
- **1** handful pomegranate seeds
- **1** handful cashew nuts, chopped
- **1** handful fresh cilantro, chopped
- **2 tbsp** fresh mint leaves
- a pinch of salt and pepper
- **1 tsp** chili flakes
- **4 tbsp** honey-lime dressing

1. In a large bowl, mix the cucumber, bell pepper, mango, cashew nuts, pomegranate seeds and herbs. Add a pinch of salt, freshly ground black pepper and chili flakes.
