## Chef's Tips & Notes

- Use the freshest eggs possible for poaching — fresh eggs have tighter whites that hold together beautifully in the water, resulting in a perfectly shaped poached egg with no wispy strands.
- Add a splash of white vinegar to the poaching water. The acid helps the egg whites coagulate quickly, giving you a neater, more compact poached egg every time.
- Let the toast cool for just 30 seconds before spreading the cream cheese. If the bread is too hot, the cream cheese will melt and slide off instead of creating a thick, creamy layer.

## Chef Ana's Recipe Notes

Smoked Salmon and Poached egg Toast is a combination of cream cheese, arugula, salmon, and poached egg on toast. This is a savory dish with a rich and creamy texture from the cream cheese, a slightly bitter and peppery taste from the arugula, a delicate and slightly salty flavor from the salmon, and a rich and creamy yolk from the poached egg. This dish is a harmonious balance of different flavors and textures and would be perfect for breakfast, brunch or as a snack!

### How to make Toast with Smoked Salmon and Poached egg

Prepare the toast first. Put a corrugated pan on medium heat, add a piece of butter, and let it melt. Then place the bread slices there and fry them for a couple of minutes on each side so they get crunchy. Take them out and cool them a bit.

### Substitutions & Variations

As a personal chef who specializes in dietary accommodations, I always encourage my clients to adapt recipes to their individual needs. Here are some practical variations for this recipe:

- **Gluten-Free:** Use your favorite gluten-free bread for the toast. The rest of the recipe is naturally gluten-free.
- **Dairy-Free:** Replace the cream cheese with a plant-based cream cheese (such as Kite Hill or Miyoko’s) for the same creamy base without dairy.
- **Vegetarian/Vegan:** Replace the smoked salmon with thinly sliced marinated beet or carrot lox for a smoky, savory alternative. For the poached egg, top with seasoned smashed avocado or a silken tofu scramble.
- **Egg-Free:** Skip the poached egg and add extra smoked salmon with a drizzle of lemon juice and capers for a classic open-faced toast.

### Frequently Asked Questions

****How do I poach an egg perfectly?****

Bring a pot of water to a gentle simmer (not a rolling boil) and add a splash of white vinegar. Create a gentle whirlpool with a spoon, then carefully slide the cracked egg into the center. Cook for 3–4 minutes for a runny yolk, then remove with a slotted spoon and drain on a paper towel.

****Can I use a different type of bread?****

Absolutely! Sourdough, rye, multigrain, or a rustic ciabatta all work beautifully. A denser bread holds up better to the toppings and provides a satisfying crunch that complements the creamy and silky layers above.

****Can I make poached eggs ahead of time?****

Yes! Poach the eggs slightly underdone and transfer them to a bowl of ice water to stop cooking. When ready to serve, gently reheat them in simmering water for 30–60 seconds. This is a great trick for serving multiple toasts at once.

****What other toppings go well with this toast?****

Sliced avocado, capers, thinly sliced red onion, microgreens, or a squeeze of fresh lemon juice all pair wonderfully. A light drizzle of everything bagel seasoning adds a delicious crunchy topping.
