Chef's Notes

Okra is the dish people are most surprised by, because the classic Southern treatment boils it and most of us have only met it slimy. Baked instead — cut on the bias, tossed in garlic and paprika, spread in a single layer so nothing steams — it comes out dry and nutty with no trace of that texture. The trick is entirely about crowding: pile okra into a heap and it stews in its own moisture; give each piece room and the mucilage cooks off. It is the one side on this menu I would happily eat cold, straight from the container.

Shellfish is the allergen to know about here — the sweet chilli stir-fry is shrimp. Dairy runs through the tomato basil chicken, the stuffed potatoes, the gnocchi with burrata and the yogurt beside the pancakes. There are no tree nuts or peanuts anywhere on this delivery, which is unusual for these menus and worth knowing if someone in the house is avoiding them.

Breakfast is portioned four deep and needs no thought at all: one stack of lemon poppyseed pancakes and one tray of stuffed potatoes per morning. The Caesar dressing and the yogurt are sealed separately for the same reason in both cases — poured on in advance, one turns the potato skin soft and the other soaks the pancakes through. Thirty seconds in a dry pan for the pancakes, ten minutes at 375°F for the potatoes.

Across the dinners: the shrimp goes first, within two days, warmed once over high heat and no more. The Korean BBQ sirloin bites are genuinely good cold over the lime brown basmati and make the fastest lunch here. The tomato basil chicken wants 350°F covered so the mozzarella loosens without splitting, and the broccolini and okra both want dry heat — an air fryer for three minutes, never a microwave.
