What is Apple Bulgur Salad made of?
Apple Bulgur Salad is made of a combination of healthy ingredients that come together to create a delicious and satisfying dish. The main ingredients are:
- Bulgur: Bulgur is a type of whole grain made from durum wheat that has been boiled and dried. It has a nutty flavor and chewy texture that make it a great base for salads. By the way, bulgur is high in B vitamins and contains folic acid, which is important during pregnancy.
- Apples: The apples provide a sweet and juicy crunch to the salad. You can use any type of apple you prefer, but crisp apples like Gala or Honeycrisp work well.
- Raisins: Raisins add a burst of natural sweetness to the salad and complement the other ingredients nicely.
- Arugula: Arugula is a type of leafy green with a slightly bitter flavor that provides a nice balance to the sweetness of the apples and raisins.
- Walnuts: Walnuts add a crunchy texture and nutty flavor to the salad. They are also a good source of healthy fats, protein, and fiber.
- Parmesan Cheese: Parmesan cheese adds a salty and nutty flavor to the salad and is a good source of calcium and protein.
- Honey Mustard Dressing: The dressing is made from a simple mixture of honey, Dijon mustard, olive oil, salt, and pepper. The honey provides a sweet contrast to the tangy Dijon mustard, while the apple cider vinegar adds a bright and tangy flavor.
These ingredients are mixed together to create a delicious and nutritious salad that can be served as a side dish or a main dish. You can add additional toppings such as grilled shrimp to make it a more filling and satisfying meal.

What is bulgur
Bulgur is a type of whole grain that is made from cracked wheat berries. It is a staple ingredient in many Mediterranean and Middle Eastern dishes and has a nutty, slightly chewy texture. Bulgur is high in fiber, protein, and essential vitamins and minerals, making it a nutritious addition to meals.
Is bulgur healthy for weight loss?
Yes, bulgur can be a healthy option for weight loss as it is low in calories and high in fiber, protein, and essential vitamins and minerals. The high fiber content in bulgur can help you feel full for longer, which can help you eat less and potentially lose weight.
However, bulgur is still a carbohydrate, and itβs important to portion it appropriately and balance it with other healthy foods in a diet in order to maintain a healthy weight.
As with any food, moderation and portion control are key to a healthy diet and weight loss. Incorporating bulgur into a balanced diet that includes plenty of fresh fruits and vegetables, lean proteins, and healthy fats can be a nutritious and satisfying way to support weight loss efforts.

How to make Apple Bulgur Salad
Cook bulgur in accordance with the package instructions. I use a 2:1 ratio of water to bulgur and cook it with a pinch of salt on medium heat for about 20 minutes. When the bulgur is cooked, drain it and set it aside to cool.
While bulgur is being cooked, cut an apple into pieces that would be easy to eat in the salad. Chop walnuts.
Roughly cut arugula if the leaves are big. If you have baby arugula you can leave it as it is. Prepare the Honey Mustard dressing. In a large salad bowl mix arugula leaves, bulgur and apple pieces.
Then add chopped walnuts and raisins and mix well.
Sprinkle the salad with the Honey Mustard dressing and mix it so the dressing covers all the ingredients.
Place the salad on the serving plate and dress it with shredded Parmesan cheese. Enjoy!

Substitutions & Variations
As a personal chef who specializes in dietary accommodations, I always encourage my clients to adapt recipes to their individual needs. Here are some practical variations for this recipe:
- Gluten-Free: Replace the bulgur with cooked quinoa or millet. Both grains have a similarly light, fluffy texture and absorb the honey mustard dressing beautifully.
- Vegan & Dairy-Free: Omit the Parmesan cheese and swap honey for pure maple syrup in the dressing. Add nutritional yeast for a savory, nutty flavor that mimics the Parmesan.
- Nut-Free: Replace the walnuts with toasted sunflower seeds or pepitas (pumpkin seeds). They deliver the same satisfying crunch without any tree nut allergens.
Frequently Asked Questions
Can I cook the bulgur ahead of time for meal prep?
Yes! Cooked bulgur stores perfectly in an airtight container in the refrigerator for up to 4 days. Keep it separate from the arugula, apples, and dressing. When you are ready to eat, toss everything together β the cold bulgur actually makes the salad extra refreshing.
How do I keep the apple slices from turning brown?
Toss the freshly cut apple pieces with a teaspoon of lemon juice immediately after slicing. The citric acid prevents oxidation and keeps the slices looking crisp and bright for several hours. This also adds a subtle tang that pairs well with the honey mustard dressing.
Which apple variety works best in this salad?
I recommend firm, crisp varieties like Honeycrisp, Fuji, or Gala. They hold their texture in the salad and provide a balanced sweet-tart flavor. Avoid softer varieties like Red Delicious or McIntosh β they tend to turn mealy and will not deliver the satisfying crunch you want.
Can I use a different dressing instead of honey mustard?
Absolutely. A simple apple cider vinaigrette or a lemon-tahini dressing works wonderfully with the walnuts and arugula. That said, the honey mustard is what makes this particular combination sing β the sweet-tangy balance ties the fruit, grain, and greens together perfectly.
