Chef's Tips & Notes

Use fresh blueberries whenever possible for the best burst of flavor and texture. If using frozen, thaw them completely on a paper towel and pat dry before adding to the salad — excess moisture will wilt the arugula.
Toast the almonds in a dry skillet over medium heat for 2–3 minutes until fragrant and golden. Toasted almonds have a dramatically richer, nuttier flavor compared to raw ones and add a wonderful crunch.
Dress the salad just before serving. Arugula is delicate and wilts quickly once dressed. Toss it lightly with the vinaigrette to coat without crushing the leaves.

Substitutions & Variations

As a personal chef who specializes in dietary accommodations, I always encourage my clients to adapt recipes to their individual needs. Here are some practical variations for this recipe:

  • Dairy-Free: Replace the feta with crumbled dairy-free feta or diced avocado for a creamy element. The salad is delicious without any cheese at all — the blueberries and almonds carry plenty of flavor on their own.
  • Nut-Free: Swap the almonds for roasted sunflower seeds or pumpkin seeds. They provide the same satisfying crunch without the allergen concern and pair beautifully with the blueberries and arugula.

Frequently Asked Questions

Can I use a different green instead of arugula?

Yes, baby spinach or mixed spring greens work well as substitutes. Arugula’s peppery bite is what makes this salad special, but if you find it too bitter, baby spinach offers a milder, slightly sweet base that still pairs nicely with the blueberries and feta.

Can I make the dressing ahead of time?

Absolutely. The olive oil, apple vinegar, and Dijon mustard dressing can be whisked together and stored in a sealed jar in the refrigerator for up to a week. Give it a good shake before drizzling over the salad, as the oil and vinegar will naturally separate.

What other fruits work well in this salad?

Strawberries, raspberries, blackberries, or sliced fresh figs all make excellent substitutes or additions. Pomegranate seeds are another great option during the fall and winter months, adding a similar burst of juicy sweetness and a beautiful pop of color.
