What are these Cucumber sushi rolls made of?
Cucumber Salmon sushi rolls, also known as rice-less sushi rolls or cucumber maki, are made using cucumber as a substitute for nori (seaweed). The rolls consist of the following ingredients:
- Cucumber: Large cucumber slices act as the outer layer and wrapping for the sushi rolls. The cucumber provides a refreshing and crunchy texture.
- Filling: Cream Cheese: A layer of creamy cream cheese is spread over the cucumber slices, adding richness and tanginess to the rolls. Salmon: Sushi-grade salmon, thinly sliced, is placed on top of the cream cheese. The salmon adds a savory and flavorful element to the rolls. Are Cucumber sushi rolls healthy?
Cucumber salmon sushi rolls can be a healthy option. Here are some potential health benefits of cucumber sushi rolls:
- Low in Calories: Cucumber sushi rolls are typically lower in calories compared to traditional sushi rolls with rice. Using cucumber as a replacement for rice reduces the overall calorie content, making them a lighter option.
- High in Fiber: Cucumbers are a good source of dietary fiber, which can support digestive health and promote feelings of fullness. Including cucumber in sushi rolls adds fiber to the meal.
- Hydrating: Cucumbers have a high water content, which helps to hydrate the body. Eating cucumber sushi rolls can contribute to your overall hydration levels.
- Nutrient-Rich: Cucumbers are rich in vitamins, minerals, and antioxidants. They provide nutrients like vitamin K, vitamin C, potassium, and magnesium. Adding cucumbers to your sushi rolls can contribute to a well-rounded and nutritious meal.

Substitutions & Variations
As a personal chef who specializes in dietary accommodations, I always encourage my clients to adapt recipes to their individual needs. Here are some practical variations for this recipe:
- Dairy-Free: Replace cream cheese with a plant-based cream cheese alternative or mashed avocado. Both spread easily on the cucumber strips and provide that creamy richness the rolls need.
- Vegetarian/Vegan: Skip the salmon and fill the rolls with thinly sliced mango, julienned carrots, bell pepper strips, and avocado for a colorful plant-based version.
- Soy-Free/Low-Sodium: Replace soy sauce with coconut aminos for a soy-free and lower-sodium alternative that still delivers a rich umami flavor.
Frequently Asked Questions
Can I make cucumber sushi rolls ahead of time?
You can prep all the components in advance, but assemble the rolls no more than 1–2 hours before serving. Assembled rolls release moisture from the cucumber and become soggy if stored too long.
What other fillings work in cucumber sushi rolls?
Try smoked salmon with dill cream cheese, spicy tuna with sriracha mayo, or a veggie version with mango, carrot, and bell pepper. The cucumber wrap is versatile enough for almost any sushi-style filling.
How do I keep the cucumber rolls from falling apart?
Use a mandoline for uniformly thin strips, pat them very dry, and don’t overfill. A thin smear of cream cheese acts as “glue” to hold the roll together. Use a sharp wet knife for clean cuts.
