This Finnish Creamy Salmon Soup recipe is very easy to make! The soup has a mild, fishy and tender flavor with a slightly salty taste. This dish is just a great combination of flavors, textures and colors and is a must to cook, especially in winter.

Ingredients

  • 400 g Salmon filet
  • 2 middle potatoes
  • 1 middle carrot
  • 120 g Broccoli
  • 0.25 Yellow onion
  • 1,2 liter Vegetable or Fish stock or water
  • 100 g Cream (18%)
  • 1 bunch dill
  • 0.5 tsp Chili flakes
  • 0,25 tsp Black pepper
  • 0,25 tsp Salt

Instructions

Wash the vegetables. Peel potatoes and cut them into 1cm cubes. Peel the carrot and cut it into semicircles.

Separate broccoli into small florets.

Chopp onion and dill.

Cut salmon filet into 1cm cubes.

Place a saucepan on medium heat, add olive oil and onion there. Fry till gold (about 5 mins).

Then add fish stock or water, cover the saucepan with a lid and settle it to boil.

When the water starts boiling add cur potatoes, carrots, chili flakes, salt and pepper. Taste the stock, if needed, add more salt. Decrease the heat to medium and cook for about 10 mins, till the vegetables are fully cooked.

Then add broccoli and mix. Cook for 1 min.

Add salmon pieces, cook for a couple of minutes till the salmon gets pink, and then add the cream. Mix.

The soup is ready to be served. Pour it into the bowls and serve with chopped dill. Enjoy!

Chef's Tips & Notes

Add the salmon cubes in the last 2–3 minutes of cooking β€” they only need enough time to turn opaque and pink. Overcooking salmon in soup makes it dry and flaky instead of tender and silky.
Cut the salmon into uniform 1cm cubes so every piece cooks at the same rate. Uneven pieces mean some will be perfectly done while others are overcooked and tough.
Add the cream at the very end, after removing the pot from high heat. This prevents the cream from curdling and keeps the soup beautifully smooth and velvety.

How to make Finnish Creamy Salmon Soup ?

First, let’s prepare the vegetables. Wash them all with water.
