In a small bowl, combine the diced mango, finely chopped red onion, green bell pepper, lemon juice, and chopped cilantro. Mix well to create the mango salsa. Set it aside.
Season the shrimp with salt and black pepper to taste.Heat olive oil in a skillet over medium-high heat.Add the seasoned shrimp to the skillet and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Once cooked, remove the shrimp from the skillet and set them aside.
Toast the burger. Place a handful of arugula leaves on the bottom bun. Add the cooked shrimp on top of the arugula. Spoon the mango salsa generously over the shrimp. Finish with the top bun. Enjoy!
