These baked Parmesan fish nuggets are a healthier alternative to traditional fish nuggets. They are tender and flaky on the inside and crispy and crunchy on the outside and can be a delicious appetizer or a main dish!
Ingredients
- 1 lb. cod fillets or other white fish (bass, Mahi-Mahi etc.)
- 1 cup panko breadcrumbs
- 1/3 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg
- cooking spray or some olive oil
Instructions
Preheat your oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
Cut the fish filet into nuggets-size pieces. Set them aside.
Prepare 2 bowls. In one bowl, mix together the breadcrumbs, grated Parmesan cheese, garlic powder, oregano, salt, and black pepper. Beat the egg into the other bowl.
Dip each piece of fish into the beaten eggs, then coat it in the breadcrumb mixture. Press the breadcrumbs gently onto the fish to make sure they adhere.
Place the coated fish nuggets on the prepared baking sheet and spray them lightly with cooking spray or sprinkle them with some olive oil.
