Chef's Tips & Notes

For the best texture, bring your salmon to room temperature for 10–15 minutes before cooking. This ensures perfectly even cooking and prevents the outside from overcooking while the center stays cold β€” a technique I picked up during my years in professional kitchens.
Use a meat thermometer to check doneness: salmon is perfectly cooked at an internal temperature of 145Β°F (63Β°C). Pull it from the heat a few degrees early, as residual heat will carry it the rest of the way.
Pat the salmon completely dry with paper towels before seasoning or searing. Removing surface moisture is the single most important step for achieving a golden, crispy crust.

Baked Pomegranate Salmon is a healthy and delicious dish that can make a simple dinner festive. The preparation will take just 30 mins, but the result will amuse everyone. Sweet and sour Pomegranate molasses and a soft and gentle salmon filet make a great final dish. Let’s make it!

Ingredients for 2 serves:

  • 400g salmon filet
  • a pinch of salt
  • freshly ground black pepper
  • 1 tbsp olive oil
  • 4 tbsp Pomegranate molasses
  • a couple of rosemary sprigs

Some tips before cooking:

  • Salmon filet. I use pre-portioned salmon as they take less time to cook but ensure not to overcook it. Then salmon will be dry and lose its gentleness. Salmon is rich in many key nutrients, including selenium, phosphorus, and B vitamins and it’s a good source of protein.
  • Spice mix. As you see, there are no a lot of spices in the ingredients list, that’s because we don’t want to kill the primarily salmon taste and the pomegranate taste with anything else. So we use Pomegranate molasses as a primary spice and rosemary springs as a bit of addition.
  • Garnish. This dish perfectly suits rice. I like Black rice, also known as purple rice or Basmati is also a good option. To add freshness, add some fresh salad to the final dish, e.x. Broccoli and Grapefruit Salad will be a good pairing.

Substitutions & Variations

As a personal chef who specializes in dietary accommodations, I always encourage my clients to adapt recipes to their individual needs. Here are some practical variations for this recipe:

  • Gluten-Free: This recipe is naturally gluten-free! Salmon, pomegranate molasses, olive oil, and rosemary are all free of gluten. Just double-check your pomegranate molasses label to ensure no wheat-based thickeners were added.
  • Dairy-Free: This recipe is naturally dairy-free as written β€” it uses only olive oil, pomegranate molasses, and simple seasonings. No substitutions needed.
  • Vegetarian/Vegan: For a plant-based version, substitute the salmon with extra-firm tofu, tempeh, or hearty portobello mushrooms. Marinate them the same way for maximum flavor absorption.
  • Low-Sodium: Reduce or omit added salt and use herbs, citrus zest, and spices for flavor instead. Fresh lemon juice and freshly cracked black pepper can brighten any dish without extra sodium.

Frequently Asked Questions

What is pomegranate molasses and where can I find it?

Pomegranate molasses is a thick, tangy-sweet syrup made by reducing pomegranate juice. It is a staple in Middle Eastern and Mediterranean cooking. You can find it at most well-stocked grocery stores, Middle Eastern markets, or online. Look for brands with only pomegranate juice, sugar, and lemon juice β€” avoid those with artificial additives.

Can I use a different type of fish instead of salmon?

Yes! Arctic char, steelhead trout, or thick-cut cod all work beautifully with pomegranate molasses. Fattier fish like salmon or trout hold up best to the bold glaze, but leaner white fish can work too β€” just reduce the baking time slightly to prevent drying out.

How do I know when the salmon is done?

Salmon is perfectly cooked at an internal temperature of 145Β°F (63Β°C). You can also check by gently pressing the thickest part with a fork β€” it should flake easily and appear opaque throughout. For a slightly more tender, restaurant-style finish, pull it from the oven at 140Β°F and let residual heat finish the job.

Can I marinate the salmon for longer than 10 minutes?

You can marinate for up to 30 minutes in the refrigerator for a deeper pomegranate flavor. However, avoid marinating for longer than an hour, as the acidity in the molasses can begin to break down the surface of the fish, resulting in a mushy texture.
