Chef's Tips & Notes

Do not overcook shrimp β€” they are done the moment they turn pink and curl into a loose C-shape. Overcooked shrimp become rubbery and lose their natural sweetness.
Devein and pat shrimp completely dry before cooking. Excess moisture causes steaming instead of searing, which prevents that gorgeous golden caramelization.
For maximum flavor, cook shrimp in a single layer in a very hot skillet. Crowding the pan lowers the temperature and steams the shrimp instead of giving them a beautiful sear.

Substitutions & Variations

As a personal chef who specializes in dietary accommodations, I always encourage my clients to adapt recipes to their individual needs. Here are some practical variations for this recipe:

  • Gluten-Free: This salad is naturally gluten-free as written β€” no modifications needed!
  • Dairy-Free: This recipe is already completely dairy-free β€” enjoy it as is!
  • Vegetarian/Vegan: Replace the shrimp with marinated and pan-seared extra-firm tofu, crispy roasted chickpeas, or hearts of palm for a satisfying plant-based protein.
  • Vegan-Friendly: Swap honey in the dressing for pure maple syrup or agave nectar in equal amounts. Both provide a similar sweetness profile without compromising the dish’s overall flavor.
  • Nut-Free: Replace the walnuts with sunflower seeds, pumpkin seeds (pepitas), or toasted coconut flakes for a similar crunch without the allergen concern.

Frequently Asked Questions

How do I pick the perfect mango for this salad?

Look for a mango that gives slightly when pressed, similar to a ripe peach. It should have a sweet, fragrant aroma at the stem end. Avoid mangoes that are rock-hard or have wrinkled, mushy skin. If your mango is not quite ripe, leave it at room temperature for a day or two until it softens and becomes aromatic.

Can I use pre-cooked or frozen shrimp for this salad?

Yes! Thaw frozen shrimp in the refrigerator overnight or under cold running water, then pat them completely dry. Toss them in a hot skillet with the seasonings for just 1–2 minutes to warm through and add flavor. Pre-cooked shrimp save time while still delivering great results in this salad.

How do I keep the avocado from browning?

Cut the avocado just before assembling the salad and toss it gently with a squeeze of lemon or lime juice. The acid slows oxidation and keeps the avocado vibrant green for longer. If prepping ahead, store the avocado cubes in an airtight container with a bit of citrus juice on top.

What can I use instead of arugula?

Baby spinach is the mildest alternative and pairs beautifully with the sweet mango. Watercress provides a similarly peppery bite to arugula. Mixed spring greens or even thinly shredded romaine also work well and add a satisfying crunch to the salad.
