Squid Salad with Egg

Ingredients

  • 1 lb. squid, cleaned and sliced into rings
  • Water and salt, for boiling squid
  • 2 boiled eggs, diced
  • 1/2 cup grated Cheddar cheese
  • 1/4 cup scallions, finely chopped
  • 2 tbsp mayonnaise
  • Salt and pepper, to taste

Instructions

1

Prepare the eggs. Settle the water with eggs to boil. Cook them in boiling water for 7 minutes. Then transfer them to the bowl with cold water and let them cool. Once they are cooled, peel them and dice.

2

Add the squid to a pot of boiling water with some salt and cook for 1-2 minutes or until tender. Drain the squid and set it aside to cool.

3

Once the squid is cooled, cut it. Transfer it to a bowl, add the diced boiled eggs, mayonnaise, grated Cheddar cheese, and chopped scallions. Mix well to combine. Season with salt and pepper, to taste. Serve and enjoy!

Chef's Tips & Notes

Do not overcook the squid โ€” 1 to 2 minutes in boiling water is all it needs. Overcooked squid turns rubbery and chewy. As soon as it turns opaque and curls slightly, pull it out and plunge it into ice water to stop the cooking.
For the cleanest cuts, slice the squid after it has completely cooled. Cold squid holds its shape better and gives you neat, even rings that look beautiful in the salad.
Mix the dressing and toss the salad just before serving. Adding mayonnaise too early can make the salad watery as the ingredients release moisture over time.

Frequently Asked Questions

How do I keep squid from becoming rubbery?

The key is timing โ€” cook squid for either very briefly (1โ€“2 minutes) or very long (over 30 minutes). Anything in between makes it tough and chewy. For this salad, a quick 1โ€“2 minute blanch followed by an ice bath gives you perfectly tender squid every time.

Can I use frozen squid for this salad?

Yes! Frozen squid works beautifully and is often pre-cleaned, saving you prep time. Thaw it completely in the refrigerator overnight, then pat it dry before blanching. Frozen squid can actually be more tender than fresh because the freezing process breaks down the muscle fibers.

How long does squid salad last in the fridge?

Stored in an airtight container, this salad keeps well in the refrigerator for up to 2 days. The flavors actually meld nicely overnight. Give it a gentle stir before serving and add a touch more mayonnaise if it looks dry.

What other ingredients go well in squid salad?

This salad is very versatile! Try adding diced celery for crunch, sweet corn kernels, diced cucumber, or fresh dill for a bright herbal note. A squeeze of lemon juice also brightens all the flavors.
