Chef's Tips & Notes

Always use sushi-grade ahi tuna from a trusted fishmonger and keep it chilled until the moment you are ready to dice it. Quality and freshness are everything for raw fish dishes.
Cut the tuna into uniform 1-cm cubes for the best texture and even marination. Keeping the pieces consistent ensures every bite has the perfect balance of marinade and fish.
Do not over-marinate the tuna β€” 30 minutes is ideal. Leaving it too long in the soy-based marinade will start to β€˜cook’ the surface of the fish, changing its delicate texture.

Frequently Asked Questions

Can I use frozen tuna for a poke bowl?

Yes, as long as it is sushi-grade tuna that has been properly flash-frozen. Thaw it slowly in the refrigerator overnight β€” never at room temperature or in warm water, as this can compromise both safety and texture.

How long can I marinate the tuna?

About 30 minutes is ideal. If you marinate the tuna much longer, the acid and salt in the soy sauce will begin to change the texture of the fish, making it mushy. For the freshest flavor and best texture, keep the marination time short.

Can I use salmon instead of tuna?

Absolutely! Sushi-grade salmon makes a delicious poke bowl with a slightly richer, fattier flavor. Dice it the same way and marinate it using the same sauce. Both fish pair beautifully with the pineapple and avocado toppings.

Can I make the poke bowl ahead of time?

You can prepare the rice, cut the vegetables, and make the marinade ahead of time. However, do not marinate the tuna or assemble the bowl until just before serving to keep the fish fresh and the toppings crisp.
