  • 1-2 zucchinis
  • 100 g feta cheese
  • 1 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 1/2 tsp dried oregano
  • 1/4 tsp chili flakes
  • Salt and pepper
  • some olive oil (for frying)
  • Skewers

Instructions

1

Wash the zucchinis and cut them into thin, long slices using a mandoline or a sharp knife.

2

In a bowl, combine the feta cheese cubes with olive oil, lemon juice, herbs and spices, salt and pepper. Gently toss the feta cubes to coat them in the seasoning mixture.

3

Take a slice of zucchini and place a seasoned feta cube at one end. Roll the zucchini tightly around the feta cube, creating a wrap. Repeat this process with the remaining zucchini slices and feta cubes.

4

Thread the zucchini-feta wraps onto skewers, piercing through the zucchini and feta to hold them together. Repeat with the remaining wraps and skewers.

5

Preheat a non-stick frying pan over medium heat and add a drizzle of olive oil. Place the skewered Zucchini Feta in the pan and cook for about 2 minutes per side, or until the zucchini is lightly browned and tender, and the feta cheese starts to melt.

6

Remove the skewers from the pan and let them cool for a few minutes. Serve the pan-fried Zucchini Feta Wraps on the skewers as an appetizer or side dish. Garnish with additional fresh herbs and a squeeze of lemon juice if desired.

Chef's Tips & Notes

Slice the zucchini as thin and uniform as possible β€” a mandoline gives the best results. Thin slices wrap easily around the feta without cracking, and they cook quickly and evenly in the pan.
Don't skip patting the zucchini dry after slicing. Excess moisture will cause the oil to splatter and prevent the zucchini from getting that gorgeous golden sear.
If using wooden skewers, soak them in water for at least 20 minutes before assembling to prevent them from scorching in the hot pan.

What are Zucchini Feta Skewers made of?

Zucchini Feta Skewers are made using the following ingredients:

  1. Zucchinis: Zucchinis are a type of summer squash with a mild and slightly sweet flavor. They are typically green and have a tender flesh. In this recipe, 1-2 zucchinis are used. Zucchini contains several vitamins, minerals, and other beneficial plant compounds.
  2. Feta Cheese: Feta cheese is a tangy and salty cheese that originates from Greece. It has a crumbly texture and a distinctive flavor. It is cut into cubes, wrapped in thin zucchini slices, and pierced onto the skewers.
  3. Olive Oil: Olive oil is a common ingredient in Mediterranean cuisine. It adds richness and a subtle fruity flavor to the dish. About 1 tablespoon of olive oil is used to coat the zucchinis and feta cheese, providing moisture and helping to prevent sticking during cooking.
  4. Lemon Juice: Lemon juice adds a refreshing and tangy flavor to the skewers. It helps to brighten the overall taste of the dish.
  5. Dried Oregano: Dried oregano is a herb commonly used in Mediterranean cooking. It has a slightly earthy and aromatic flavor that complements the other ingredients.
  6. Chili Flakes: Chili flakes add a touch of heat and spiciness to the dish. The amount used can be adjusted based on personal preference.
  7. Salt and Pepper: Salt and pepper are essential seasonings used to enhance the flavors of the dish. They help to balance the overall taste. The amount of salt and pepper can be adjusted according to personal preference.
  8. Skewers: Skewers are used to thread the zucchini and feta cheese pieces, allowing them to be easily cooked and served. They can be made of metal or wood.

By combining these ingredients, you create Zucchini Feta Skewers that offer a delicious blend of flavors, including the mildness of zucchini, the tanginess of feta cheese, and the additional herb and spice elements. Zucchini Feta Skewers ingredients

How do you cut zucchini for skewers?

To slice zucchini for skewers, you can follow these steps:

  1. Start by washing the zucchini thoroughly to remove any dirt or debris. Pat them dry with a clean kitchen towel or paper towels.
  2. Trim off both ends of the zucchini using a knife. This ensures that you have a clean and even surface to work with.
  3. Determine the thickness you prefer for your zucchini slices. It’s generally recommended to cut the zucchini into slices that are about ΒΌ inch thick.
  4. If you have a mandoline, it can be a handy tool for achieving consistent thickness. Set the mandoline to your desired thickness, and carefully run the zucchini along the blade to create uniform slices. Exercise caution and use the safety guard to protect your fingers.
  5. If you don’t have a mandoline, you can still achieve uniform slices using a sharp knife. Hold the zucchini firmly and make straight, even slices, maintaining the desired thickness. Take your time and focus on creating slices that are as consistent as possible.
  6. Repeat the process with the remaining zucchini until you have enough slices for your skewers.

How do you make zucchini less soggy?

o make zucchini less soggy, there are a few techniques you can try:

  1. Salting and Draining: Slice or dice the zucchini as desired and sprinkle it with salt. Let it sit for about 10–15 minutes to draw out excess moisture. Rinse the zucchini with cold water and pat it dry with a clean kitchen towel or paper towels before using it in your recipe. This process helps remove some of the water content from the zucchini, resulting in less sogginess during cooking.
  2. Quick SautΓ©ing or Stir-Frying: Instead of cooking zucchini for an extended period, opt for quick sautΓ©ing or stir-frying over high heat. This method allows the zucchini to cook rapidly, reducing the time it spends in contact with heat and minimizing moisture loss.
  3. Roasting or Grilling: Roasting or grilling zucchini can help evaporate excess moisture and enhance its natural flavors. The high heat of these cooking methods promotes caramelization and adds a pleasant texture to the zucchini, reducing the chances of it becoming overly soggy.
  4. Avoid Overcooking: Pay attention to the cooking time when preparing zucchini. Overcooking can lead to excessive moisture release and mushy texture. Cook the zucchini until it is just tender but still retains some firmness.
  5. Use Fresh Zucchini: Fresher zucchini generally has less moisture content compared to older zucchinis. Choose zucchinis that are firm, with smooth skin and no signs of wilting or softness. Using fresh zucchini can help prevent excess moisture and maintain a more desirable texture.

By incorporating these techniques, you can minimize the sogginess of zucchini in your dishes and enjoy its natural flavor and texture. Experiment with different cooking methods and find the one that suits your preferences and recipe requirements. Zucchini Feta Skewers If you like zucchini, check out these recipes:

  • Gluten-Free: This recipe is naturally gluten-free as written β€” no flour, breadcrumbs, or grains of any kind.
  • Dairy-Free / Vegan: Replace the feta with a plant-based feta alternative (such as Violife Greek White) or seasoned firm tofu cubes marinated in lemon juice and olive oil for a similar tangy bite.
  • Low-Sodium: Reduce or omit added salt and use herbs, citrus zest, and spices for flavor instead. Fresh lemon juice and freshly cracked black pepper can brighten any dish without extra sodium.

Frequently Asked Questions

Can I grill these skewers instead of pan-frying?

Absolutely! Grill over medium-high heat for about 2 minutes per side. The grill adds a wonderful smoky char. Just make sure your grill grates are well-oiled to prevent the zucchini from sticking.

Can I assemble the skewers ahead of time?

Yes! Assemble the skewers up to a few hours in advance and store them covered in the refrigerator. Cook just before serving for the best texture. The feta actually absorbs more flavor from the marinade as it sits.

What other cheese works besides feta?

Halloumi is an excellent alternative β€” it holds its shape beautifully when heated and develops a gorgeous golden crust. Fresh mozzarella cubes or goat cheese also work well, though they’re softer and melt faster.

How do I prevent the zucchini from unrolling on the skewer?

Make sure you pierce through both the zucchini wrap and the feta cube when threading. Use two skewers per batch of rolls (like a ladder) for extra stability. Pressing the rolls gently after threading also helps them hold together.
