Shrimp Quesadilla is a delicious Mexican dish that combines succulent shrimp, melted cheese, and bell peppers inside a tortilla. The shrimp quesadilla can be enjoyed on its own as a delicious and satisfying meal, or it can be served with accompaniments such as salsa, guacamole, sour cream, or fresh lime wedges for added zest and creaminess.
Prepare
Cook
In a skillet, heat a bit of oil over medium heat. Add the sliced bell pepper and onion, and sauté until they are softened and lightly caramelized, about 3-5 minutes.
Add the shrimp, garlic powder, cumin, paprika, and chili flakes to the skillet. Sauté for 3-4 minutes, or until the shrimp turn pink and opaque. Add salt and pepper, to taste. Remove from heat and set aside.
Preheat a large non-stick skillet or griddle over medium heat. Place a tortilla on the preheated skillet. Sprinkle the shredded cheese evenly over one half of the tortilla. Arrange 2-3 tbsp of bell peppers and shrimp filling over the cheese layer and cover with some more cheese. Be sure not to overfill the quesadilla. Fold the tortilla in half, pressing gently to seal the edges together.
Cook the quesadilla for 2-3 minutes on each side, or until it turns golden brown and the cheese has melted. Repeat this process with the remaining tortillas and filling ingredients.
Once cooked, transfer the quesadillas to a cutting board and let them cool for a minute. Then, slice each quesadilla into wedges. Serve the shrimp quesadillas warm with optional toppings such as sliced jalapeños, chopped cilantro, sour cream, guacamole, or salsa.

The healthiness of shrimp quesadillas depends on the ingredients used and the overall balance of your diet. Here are some factors to consider:
Incorporate shrimp quesadillas as part of a balanced diet that includes a variety of nutrient-rich foods such as fruits, vegetables, whole grains, lean proteins, and healthy fats. Balancing the quesadilla with other nutritious components ensures you’re getting a wide range of nutrients.

Quesadillas can be prepared to be either soft or crispy, depending on personal preference and the cooking method used. Here are two common approaches:
Some people enjoy the softer, more foldable texture, while others prefer the crispy, crunchy texture. You can experiment with different cooking times and techniques to achieve your desired level of crispiness.

A blend of cheddar and Monterey Jack melts smoothly and provides the perfect balance of sharp and mild flavors. Pepper Jack adds heat if you like spicy quesadillas. Avoid hard cheeses like Parmesan — they don’t melt well enough for quesadillas.
Don’t overload the filling — 2–3 tablespoons per half tortilla is plenty. Cook the shrimp and vegetables just enough to remove excess moisture before assembling. Use medium heat to crisp the tortilla, and don’t wrap cooked quesadillas in foil — that traps steam and softens the crust.
Yes! Prepare the shrimp and vegetable filling up to 2 days ahead and store it in the refrigerator. Assemble and cook the quesadillas just before serving for the crispiest results.
