Letβs begin with the preparation of the Marinara sauce. Finely chop garlic, onion and celery. Chop parsley. Weβll add it at the end of the cooking.
Place a saucepan on medium heat. Add olive oil, onion and garlic and fry them till fragrant (for about 3β4 mins), stirring occasionally.
Add chopped celery and mix. Stew the vegetables for a couple of minutes so they get softened.
Add white wine to the saucepan, and let it simmer for about a minute. Youβll feel a nice aroma!
Pour diced tomatoes and mix them with the wine and vegetables. Add salt, pepper, oregano and sugar, and let it simmer for 2 mins so all the added ingredients could open their flavors. The marinara sauce is ready!
Place the mussels into the sauce and mix so the sauce covers all the mussels. Decrease the heat to low and let it being cooked for 10 mins.
While the mussels are being cooked, letβs cook the pasta. Place a pot on high heat, and let it starts boiling. Then add a pinch of salt and pasta, I chose linguine type. Cook till al dente in accordance with pasta package instructions. Mine took 12 mins.
When the time of cooking is up, add parsley to the sauce.
Drain the pasta and add it to the Mussels Marinara. Mix well. The Mussels Marinara Pasta is ready to be served.
Place pasta on the plates, and serve with some shredded Parmesan cheese and freshly ground black pepper. Enjoy!
