Cook the spaghetti until al dent according to the package instructions. Drain them and set them aside.
For the mushroom breadcrumbs, heat 1 tablespoon of olive oil over medium heat in a large skillet. Add the breadcrumbs and minced garlic, and sauté for 2-3 minutes, or until the breadcrumbs are golden brown and crispy. Remove from the heat and stir in the dried oregano. Set aside.
Heat the remaining tablespoon of olive oil over medium-high heat. Add the sliced mushrooms and sauté for 5-7 minutes. Season with salt and black pepper to taste.
Add the cooked spaghetti to the skillet with the mushrooms, drizzle 1-2 teaspoons of truffle oil over the pasta, add chopped cilantro and toss everything to combine.
Serve the pasta in bowls and sprinkle the garlicky breadcrumbs over the top. Garnish with freshly grated Parmesan cheese and enjoy!
