How are fajitas traditionally served?
Fajitas are traditionally served on a sizzling hot cast iron skillet or platter, accompanied by warm tortillas, sautΓ©ed bell peppers and onions, sour cream, guacamole, salsa, and shredded cheese. Diners then assemble their own fajitas by filling the tortillas with various toppings.

How to make Sheet Pan Shrimp Fajitas
Preheat your oven to 220Β°C (425Β°F). Line a sheet pan with parchment paper or aluminum foil. In a small bowl, mix together spices for the fajita seasoning: chili powder, chili flakes, smoked paprika, garlic powder, dry oregano, salt, and pepper. Slice the bell peppers and onions. In a large bowl, toss the sliced bell peppers and onions with olive oil and half the amount of the fajita seasoning until well-coated.
Spread the seasoned vegetables in a single layer on the prepared sheet pan and roast in the preheated oven for 15β20 minutes, or until tender and lightly charred.
While the vegetables are roasting, toss the peeled shrimp with the remaining spices and olive oil. By the way, shrimp are a great source of lean protein and healthy omega-3 fatty acids.
Once the vegetables are cooked, remove the sheet pan from the oven and add the seasoned shrimp to the pan, distributing them evenly among the vegetables. Return the sheet pan to the oven and roast for an additional 5β7 minutes, or until the shrimp are pink and cooked through.
Take the sheet pan out of the oven, and place shrimp fajitas on the serving plate.
Squeeze fresh lime juice over the cooked shrimp and vegetables, and sprinkle with fresh cilantro, if desired.
Serve the Sheet Pan Shrimp Fajitas hot with warm tortillas, salsa, sour cream, and guacamole on the side. Enjoy!

How do you assemble a fajita?
To assemble a fajita, follow these easy steps:

Substitutions & Variations
As a personal chef who specializes in dietary accommodations, I always encourage my clients to adapt recipes to their individual needs. Here are some practical variations for this recipe:
- Gluten-Free: Use corn tortillas instead of flour tortillas β theyβre naturally gluten-free and add a delicious, slightly sweet flavor that pairs beautifully with the smoky fajita seasoning.
- Vegetarian/Vegan: Replace the shrimp with thick slices of portobello mushroom, extra-firm tofu, or chunks of cauliflower. Toss them with the same fajita seasoning and roast alongside the peppers and onions. Skip the sour cream or use a plant-based alternative for a fully vegan version.
- Low-Carb: Skip the tortillas and serve the fajita mixture over a bed of shredded lettuce or cauliflower rice. The bold seasoning and charred vegetables make this just as satisfying without the carbs.
Frequently Asked Questions
Can I use chicken or steak instead of shrimp?
Absolutely! Slice boneless, skinless chicken breasts or flank steak into thin strips and toss with the same fajita seasoning. Chicken will need about 15β18 minutes in the oven, and steak about 10β12 minutes. Add the vegetables at the same time since theyβll need the full cook time.
Why are my sheet pan fajitas soggy instead of charred?
The most common reason is overcrowding the pan. Spread the vegetables and shrimp in a single layer with space between them so hot air can circulate. If your sheet pan isnβt large enough, use two pans. Also make sure your oven is fully preheated to 425Β°F before adding the pan.
Can I prep the fajita ingredients ahead of time?
Yes! Slice the peppers and onions, mix the seasoning blend, and season the shrimp up to a day in advance. Store everything separately in airtight containers in the refrigerator. When youβre ready to cook, just spread everything on the sheet pan and roast β dinner in under 25 minutes.
