These Asian-style stir fry noodles with shrimp and vegetables are a delicious and colorful dish! A combination of thin noodles, sautéed shrimp, and various colorful vegetables create a perfect meal for a quick lunch or dinner.
Prepare
Cook
Cook the noodles in water with salt according to the package instructions until they are al dente. Rinse the cooked noodles under cold water and set aside.
Prepare the Honey Mustard Soy Sauce.
Dice carrots and bell pepper. Separate broccoli into florets.
Mix shrimp with olive oil, paprika, chili flakes, salt and pepper in a bowl and set aside.
Heat a wok or large pan over high heat. Add olive oil and then add carrots, bell pepper, broccoli florets and minced garlic cloves. Cook them until they are slightly softened (for about 3-4 minutes), stirring.
Decrease the heat to medium, add shrimp to the pan and fry them for a couple of minutes, till they are pink.
Add half of the prepared Honey Mustard Soy Sauce. Mix, so the sauce covers all the vegetables and shrimp.
Add the cooked noodles, add the other half of the prepared Honey Mustard Soy Sauce and toss them with the stir-fry ingredients until everything is well combined.
Place the stir-fry in the serving bowls, and garnish with chopped scallions and peanuts. Enjoy!
