Cut the peach in halves and remove the pit, cut it into wedges. Lightly brush the peach wedges with olive oil.
Place the peach wedges on the preheated grill or grill pan, cut-side down, and cook for about 2-3 minutes or until grill marks appear and the peach is softened. Flip and cook for an additional 2 minutes. Remove from the grill and let it cool slightly.
In the meantime, prepare the dressing by whisking together the extra-virgin olive oil, balsamic vinegar (or vinegar alternative), salt, and pepper in a small bowl. Adjust the seasoning to your taste.
On a large serving plate, spread the arugula. Evenly spread grilled peach slices, and toasted walnuts. Drizzle the dressing over the salad. Sprinkle the shaved Parmesan cheese over the top of the salad. Serve the grilled peach salad immediately and enjoy!

Slightly firm peaches actually grill well — the heat softens them and intensifies their sweetness. If they’re very hard, let them ripen at room temperature for a day or two before grilling.
Absolutely! Crumbled goat cheese, feta, or burrata are all wonderful alternatives. Each brings a different character — goat cheese adds tang, feta brings saltiness, and burrata offers creamy richness.
