What can be better in the morning than a tasty breakfast? When itβs healthy, itβs twice better! Today I present you a healthy option of everyoneβs favorite dish β Waffles. Not just waffles but nutritious, refined sugar-free, gluten-free, and lactose-free waffles based on oatmeal. These Healthy Oat flour Waffles make you feel well-fed till lunch and will give you a charge of vivacity and a good mood. Letβs make it!

Ingredients for 4 waffles (2 serves):
- 1egg
- 80g oat flour (blended oats)
- ~100g coconut milk or milk of choice
- 1 tbsp honey or maple syrup
- 1 tbsp olive oil
- 0.5 tsp baking powder
- 0.5 tsp vanilla extract
Just a couple of words about the ingredients.
Egg
These waffles are healthy not just because they contain oats but also due to the egg added. No secret it is a source of protein, so itβs perfect for the morning meal.
Oat flour
What is oat flour? Itβs just blended into powdered oats. I buy already blended, just because donβt wanna spend time on blending. If you donβt want to buy oat flour for this one recipe, then blend your oats and then sift it so its consistency looks like wheat flour. This flour option is much healthier than wheat flour, but the taste is still good! Moreover, oats are nutritionally rich.Β It has more protein than most grains and also contains numerous vitamins and minerals.
Milk of choice
I like coconut milk without sugar added. You can use what you like. For example, almond milk or soy milk is also good. In the ingredients list, I wrote an approximate amount of milk that will depend on the milk type. Mine coconut takes 100g., other can take a bit less or a bit more.
Honey or Maple syrup
Thatβs the way we replace sugar in this recipe. I prefer using honey. If you wish to make your waffles less in calories, you can use 0-calorie sweetener (e.x. Erythritol).
Olive oil
This helps our waffles not to stick to the iron; 1 tbsp is enough. You can also use coconut oil if you like. I prefer olive oil.
Baking powder & Vanilla extract
Baking powder makes the waffles fluffy, and vanilla makes a pleasant aroma around the waffles plate and the kitchen. So donβt skip these ingredients. Letβs jump to the method, it is elementary!

Substitutions & Variations
As a personal chef who specializes in dietary accommodations, I always encourage my clients to adapt recipes to their individual needs. Here are some practical variations for this recipe:
- Gluten-Free: This recipe already uses oat flour, which is naturally gluten-free. Just make sure to use certified gluten-free oats to avoid any cross-contamination from processing.
- Dairy-Free: This recipe is already dairy-free β it uses coconut milk and olive oil instead of dairy milk and butter. No swaps needed!
- Vegan-Friendly: Replace the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, rested for 5 minutes). Swap honey for pure maple syrup in equal amounts. The rest of the recipe is already plant-based.
Frequently Asked Questions
Why are my oat waffles sticking to the waffle iron?
Make sure your waffle iron is properly preheated and lightly greased before adding the batter. The olive oil in the recipe helps prevent sticking, but a light spray of cooking oil on the iron ensures easy release. Avoid opening the waffle iron too early β wait until steam stops escaping from the sides, which means the waffles are set.
Can I make this batter ahead of time?
The batter is best made fresh since the baking powder starts working as soon as it contacts the wet ingredients. However, you can pre-measure the dry and wet ingredients separately the night before, then quickly combine them in the morning for a faster breakfast.
How should I reheat leftover oat waffles?
The best way to reheat waffles is in a toaster or toaster oven β this keeps them crispy on the outside and warm on the inside. You can also freeze cooled waffles in a single layer, then reheat directly from frozen in the toaster for 2β3 minutes. Avoid the microwave, as it makes waffles soggy.
