The healthiness of Lemon Poppy Seed Waffles depends on their ingredients and preparation method. Traditional waffles made with white flour, refined sugar, and a lot of butter or oil can be high in calories, saturated fat, and added sugars, which may not be the healthiest option.
However, in this lemon poppy seeds waffles recipe we use oat flour, natural sweetener, and use healthy fats like greek yogurt. According to Functional Foods and Healthy Disease Research, poppy seeds contain antioxidants, fiber, and essential micronutrients, which provide several health benefits. Additionally, using coconut or almond milk instead of dairy milk can reduce the amount of saturated fat and calories in the recipe. You can mix the dry and wet ingredients separately the night before and refrigerate them. Combine them just before cooking — the baking powder activates when it meets the wet ingredients, so mixing too far ahead can result in flat waffles. Give the batter a gentle stir right before pouring it into the waffle iron.
The key to crispy waffles is avoiding steam buildup. Place cooked waffles on a wire rack in a 200°F (93°C) oven while you cook the remaining batter — never stack them, as trapped steam will make them soggy. For extra crispiness, let the waffle iron cook a bit longer until the steam stops escaping from the sides.
Yes! Let the waffles cool completely on a wire rack, then freeze them in a single layer on a baking sheet. Once frozen, transfer to a freezer-safe bag for up to 2 months. Reheat directly from frozen in a toaster or toaster oven at 350°F (175°C) for 3–4 minutes until crispy and warmed through.
