Choose avocados that yield gently to pressure when squeezed — they should feel like a ripe peach. Avoid avocados with dark sunken spots or an overly mushy feel. If they are still firm, leave them at room temperature for 1–2 days. To speed up ripening, place them in a paper bag with a banana.
You can cook the shrimp and prepare the filling mixture up to a day ahead. Store it in an airtight container in the refrigerator. Halve the avocados and assemble just before serving to prevent browning. A squeeze of extra lime juice over the avocado also helps keep it vibrant.
Lime juice is your best friend here — the citric acid slows oxidation significantly. Squeeze lime juice generously over the cut avocado surfaces immediately after halving them. If you need to hold them briefly, press plastic wrap directly against the exposed avocado flesh to limit air contact.
Absolutely! Pre-cooked shrimp are a great shortcut. Simply thaw them if frozen, pat dry, and toss with the chili flakes, salt, and pepper. You can serve them cold in the avocado boats or warm them quickly in a skillet for 1–2 minutes before assembling.
