Chef's Notes
Cashew chicken bites are inspired by takeout, but my technique is to sear the chicken first and add the cashews at the end. That keeps the nuts toasted and visible instead of softening inside the sauce, while red peppers and scallions stay distinct. The baby corn & bell pepper stir fry uses the same hot-pan timing, but the Italian meatballs finish slowly in tomato basil sauce.

This menu needs a clear nut and dairy check. Cashews are built into the cashew chicken bites, while Parmesan finishes the garlic Parmesan chicken skewers and basil Parmesan Dijon green beans. I made the DF Marry Me gnocchi with spinach and sun-dried tomatoes dairy free, but for a serious allergy I would still keep it away from the Parmesan dishes during packing.
The cucumber, baby bell pepper and edamame salad is the cold counterpoint to the lemon basil chicken thighs. I fold in orange segments only after the vegetables are cut, so the citrus stays whole and the dressing does not flood the bowl. In late summer, that seasonal crunch works better beside the garlic and herb fingerling potatoes than another cooked vegetable would.
