Preheat your oven to 350°F (175°C). Grease and flour an 8x8-inch square baking pan or a similar-sized cake pan.
In a mixing bowl, combine the grated carrots, blended oats, flour, coconut sugar (or honey), vegetable oil, protein powder, egg, milk, baking powder, ground cinnamon, and vanilla extract. Mix well until all the ingredients are thoroughly combined. Pour the batter into the prepared baking pan, spreading it evenly.
Bake in the preheated oven for about 25-30 minutes or until a toothpick inserted into the center comes out clean and the cake is golden brown.
While the cake is baking, prepare the yogurt and honey frosting. Simply mix together Greek yogurt or regular yogurt with honey to taste. Adjust the sweetness by adding more honey if desired.
Once the cake is done baking, allow it to cool in the pan for a few minutes, then transfer it to a wire rack to cool completely. Once the cake has cooled, spread the yogurt and honey frosting over the top of the cake. Sprinkle chopped pecans on top of the frosting for added flavor and texture.

Yes, but the texture will be slightly different. Quick oats are already partially processed, so the cake will have a finer, softer crumb. Old-fashioned rolled oats blended to a coarse flour give the best balance of structure and pleasant chewiness.
Absolutely. The protein powder is optional and adds extra nutrition but is not essential for the cake’s structure. If you leave it out, the cake will still bake up beautifully — just slightly less dense.
Because the frosting is yogurt-based, store the frosted cake covered in the refrigerator for up to 3 days. Let it sit at room temperature for 10–15 minutes before serving so the frosting softens and the flavors come alive.
