Combine the rolled oats, chopped pistachios and salt in a bowl. In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract. Pour this mixture over the dry ingredients and stir well, ensuring that everything is evenly coated.
Spread the granola mixture onto the prepared baking sheet in an even layer. Press down lightly with the back of a spatula to help the granola form clusters. Bake the granola in the preheated oven for 17-20 minutes, or until it turns golden brown. Stir the granola halfway through the baking time to ensure even cooking.
Remove the granola from the oven and let it cool completely on the baking sheet. Once it is cooled, gently break it into clusters and stir in the dried cranberries and white chocolate chips or chopped white chocolate.
