Into the well, pour in plant-based milk, oil, maple syrup, and vanilla extract. Using a whisk, gently integrate the liquid ingredients into the dry ones, whisking until a smooth batter forms without any lumps. Allow the batter to rest for around 10 minutes.
Over medium heat, warm a non-stick skillet or crepe pan. Lightly grease the pan with a small amount of oil or use cooking spray.
Once the pan is properly heated, pour a small ladleful of the batter into the center of the pan. Swiftly lift the pan from the heat source and gently swirl it to evenly spread the batter across the pan's bottom. Return the pan to the heat and let the crepe cook for approximately 1-2 minutes, observing the edges lifting and the bottom taking on a delicate golden hue.
Using a spatula, carefully lift the edges of the crepe. Once the crepe is moderately firm and no longer sticks to the pan, flip it over using your fingers or the spatula. Cook the other side for an additional 1-2 minutes, ensuring it's golden and thoroughly cooked.
Transfer the cooked crepe to a plate and repeat the process with the remaining batter.
As all the crepes are cooked, serve them while warm alongside your favored fillings and toppings. Fresh fruits, chocolate spread, nut butters, yogurt, or any toppings of your choice can be enjoyed with these delightful crepes.
