Prepare
Cook
Preheat the oven to 375°F (190°C).
Use a spoon to carefully scoop out the flesh from each zucchini half, leaving a hollow "boat."
In a skillet over medium heat, heat the olive oil. Add minced garlic, and chopped tomato. Sauté for a few minutes until the zucchini is tender and the tomato starts to soften.
Add the shrimp and cook until they turn pink and are cooked through. Decrease the heat to low.
Stir in the heavy cream, grated Parmesan, and dried oregano. Mix well to combine all the ingredients.
Place the zucchini halves in a baking dish. Divide the shrimp and zucchini mixture evenly among the zucchini boats, pressing it down gently. Bake in the preheated oven for about 15-20 minutes, or until the zucchini is tender.
Once cooked, top each zucchini boat with shredded mozzarella cheese and bake for additional 2-3 minutes until the cheese is melted. Remove from the oven and garnish the stuffed zucchini boats with freshly chopped parsley. Enjoy!

The combination of shrimp, cheese, vegetables, and seasonings creates a flavorful and satisfying dish. You can adjust the ingredients based on your preferences and dietary restrictions. Shrimp stuffed zucchini boats are a creative and delicious way to enjoy a balanced meal with a variety of flavors and textures.

Using a spoon, meticulously remove the inner flesh from each zucchini half, creating a concave “boat.”

While zucchini boats can be frozen, there are a few considerations to keep in mind. Stuffed zucchini boats can sometimes have a slightly different texture after freezing and reheating due to the moisture content of the zucchini and the other ingredients. Here are some tips if you plan to freeze them:
Remember that zucchini has a high water content, and freezing and reheating can sometimes lead to a softer texture. However, if you’re more concerned about convenience and flavor than maintaining a perfect texture, freezing your shrimp stuffed zucchini boats can be a convenient option.

After scooping out the flesh, lightly salt the inside of each zucchini half and let them sit for 5–10 minutes. Pat them dry with paper towels before filling. This draws out excess moisture and helps the boats hold their shape during baking rather than becoming soggy.
Absolutely. Gruyère, fontina, or pepper jack all melt beautifully and add their own unique flavor. Goat cheese crumbles are another delicious option that pairs wonderfully with shrimp. Use whatever melting cheese you enjoy most.
Yes! Assemble the stuffed boats completely, cover tightly with plastic wrap or foil, and refrigerate for up to 24 hours before baking. When ready, bake as directed, adding a few extra minutes since they will be starting cold. Add the mozzarella topping during the last few minutes.
A simple green salad with a lemon vinaigrette is a perfect light complement. For a heartier meal, serve with crusty garlic bread, steamed rice, or a side of roasted vegetables. The boats are also substantial enough to stand alone as a complete dinner.
