These gluten-free Chocolate waffles are soft and fluffy inside, with a crunchy thin bark outside and they are perfect for breakfast!
Prepare
Cook
Turn on your waffle maker on medium heat.
In a large bowl, mix all the ingredients except milk. Start adding the milk and whisk the batter. Control the amount of milk you have chosen. Mine took 80g for the batter to be a perfect consistency. It must be thick enough and should not drain from the whisker. Whisk the batter till smooth.
When the waffle maker is ready, place some batter in the waffle maker and cook, not opening the cover. Mine took 2 mins.
Gently pull the waffles out and serve on the plate. Enjoy with some frozen yogurt and fruit!

Gluten-free Chocolate Waffles are soft and fluffy inside, with a crisp, crunchy crust outside! Believe me, they are not worse than the ones with regular flour, they are even better as they don’t contain gluten, lactose (dairy-free) and refined sugar. Perfect as a healthy breakfast when you want something “chocolate-style.”

This Chocolate Waffles (Gluten-free) is a breakfast favorite among my clients in The Woodlands and throughout the Houston area. My philosophy has always been about elevating classic American comfort food with proper technique and the freshest local Texas ingredients. I source as much as I can from local farms and markets in the Houston area, because fresh, seasonal produce always makes a noticeable difference.

As a personal chef who specializes in dietary accommodations, I always encourage my clients to adapt recipes to their individual needs. Here are some practical variations for this recipe:
Yes! Let waffles cool completely, then place them in a single layer in a freezer bag with parchment between each one. Freeze for up to 2 months. Reheat straight from frozen in a toaster or waffle iron for the crispiest results.
Rice flour batters can be stickier than wheat-based ones. Make sure your waffle iron is thoroughly preheated and lightly brushed with oil before each batch, even if it has a non-stick coating. Avoid opening the lid too early — wait until steam stops escaping.
You can try oat flour (certified gluten-free) or a 1:1 gluten-free baking blend. The texture may vary slightly — oat flour produces a softer, more tender waffle, while blends tend to mimic the original rice flour texture well.
