  • Steaks: Thicker, ideal for grilling and slow roasting
  • Belly: Rich and buttery, perfect for sushi preparations and tartare

Essential Salmon Cooking Techniques

1. Pan-Searing (The Restaurant Method)

This is how I cook salmon 80% of the time for clients:

  1. Pat salmon completely dry with paper towels
  2. Season with salt and pepper
  3. Heat oil in a skillet over medium-high until shimmering
  4. Place salmon skin-side up first, cook 4 minutes undisturbed
  5. Flip, cook skin-side down 3–4 minutes
  6. Finish with a knob of butter, garlic, and fresh herbs

The secret: Never move the salmon once it hits the pan. That undisturbed contact creates the golden crust.
