Chef's Notes

Coq au vin blanc is a French classic, but using white wine keeps the chicken stew lighter in color than the traditional red-wine version. I braise it until the chicken is tender, then leave the mushrooms and carrots visible instead of blending them into the sauce. The Italian meatballs take the opposite technique: they finish directly in tomato basil sauce, with basil added across the top.

The Mediterranean roasted broccoli & feta and oregano-roasted zucchini, bell peppers & red onions with burrata are the two dairy sides in this delivery. I kept the dairy-free “Marry Me” soup with beans, dried tomatoes and spinach in its own tubs because dairy free is a real constraint, not a garnish choice. For an allergy or dairy sensitivity, I would review those feta and burrata dishes first, then confirm the coq au vin blanc and tomato lemon-poached cod separately.

Tomatoes do most of the color work here, from the Mediterranean tomato lemon-poached cod to the Italian cherry panzanella salad. I kept the seasonal panzanella raw with cucumbers, basil, red onion, capers and sourdough croutons, while the cod cooks with its tomatoes until they blister. One stays juicy and cool; the other collapses into the lemony cooking juices around the filet.
