Chef's Notes
My technique for the honey mustard and onion crisp chicken breast is to build the topping after the chicken is portioned, so every piece gets crunch. The Italian meatballs finish in tomato basil sauce instead, where a crisp exterior would be lost. Mediterranean tomato lemon-poached cod needs the gentlest heat of the three, with tomatoes and basil left visible in the cooking juices.

The kids menu was the constraint that shaped this cook. I left the baked cod filet plain, seared the chicken thigh bites without the honey mustard topping, and packed beef meatballs apart from the Italian meatballs in tomato basil sauce. For a dairy allergy, I would keep the steamed broccoli and baked zucchini with bell peppers away from the Mediterranean broccoli and feta during packing.
Heirloom tomatoes, zucchini and peppers are at their seasonal best in August, so I used them in more than one form. The Italian cherry panzanella keeps the tomatoes raw with cucumber, basil, red onion and sourdough croutons, while oregano-roasted zucchini, bell peppers and red onions take concentrated oven heat. Tomato lemon-poached cod sits between those approaches, with the tomatoes just softened around the filet.
